Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Young chickens
Provide the meat for both the sliced pieces and the smooth paste.
Bread crumbs
Soaked and pounded into the meat to thicken the soup and give it body.
White stock
Forms the liquid base in which the chicken is simmered.
Cream
Stirred in at the end to add richness and a smoother, creamier texture.

The step that matters

Pound the remaining meat with the bread crumbs until smooth. Breaking the meat fibres down fully with the soaked crumbs makes a fine paste that thickens the soup evenly. Lumps left behind will give a grainy texture.

Swap the mace

How well each one fits the dish's main ingredients (chicken, bread, cream, parsley, lemon, pepper):

  1. Marjoramfits better
  2. Thymefits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against chicken, bread, cream, parsley, lemon, pepper. Candidates are from the same food group and used in at least 100 recipes.
