What each ingredient does

Neck of mutton
Provides the meat and rich flavour that the stew is built around.
Potatoes
Soften during simmering and thicken the liquid as their starch releases.
Onions
Break down during simmering, adding sweetness and depth to the broth.

The step that matters

Covering the pan tightly before simmering. A tight lid traps steam so the layers cook gently in their own moisture. Loose covering lets liquid evaporate, which can leave the meat dry and the potatoes unevenly cooked.

Swap the onion

How well each one fits the dish's main ingredients (mutton, potato, pepper):

  1. Carrotfits better
  2. Capsicumfits better
  3. Tomatofits about as well
  4. Onionthe original

Fit is the average pairing score against mutton, potato, pepper. Candidates are from the same food group and used in at least 100 recipes.
