Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Whipped to stiffness, it gives the dessert its light, airy body.
Gelatine
Sets the mixture so it holds its shape when chilled and unmoulded.
Sugar
Sweetens the pineapple and balances its acidity.
Pineapple
Provides the main fruit flavour and pulp for the cream.

The step that matters

Adding the gelatine mixture to the whipped cream. Gelatine begins to set as it cools, so it must be added quickly while still fluid and mixed in promptly. If it cools too much first, it forms lumps and the cream won't set evenly.
