Hasty Pudding

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Mix the flour smoothly with a little cold milk.

  2. Boil the remaining milk and pour it over the flour mixture.

  3. Boil up and beat over the fire until the mixture is as stiff as batter.

  4. Add sugar and flavoring to taste, then mix in the butter and eggs.

  5. Butter a pie dish and spread a little jam at the bottom.

  6. Pour in the mixture and bake for about 20 minutes at 350°F (175°C).
