Pound Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Cream the butter and sugar together until light and fluffy.

  2. Beat in the eggs one at a time, alternating with the flour.

  3. Mix in the chopped mixed peel, sultanas, currants, brandy, and baking powder.

  4. Add milk as needed to achieve a smooth batter.

Bake

  1. Pour the batter into a well-lined and greased baking tin.

  2. Bake in a moderate oven at 350°F (175°C) for about 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air, giving the cake a tender, rich crumb.
Eggs
Add structure and richness as they set in the oven, binding the batter.
Flour
Forms the main structure of the cake as its proteins set during baking.
Sugar
Helps cream air into the butter and adds sweetness and browning to the crust.
Baking powder
Releases gas during baking so the cake rises and becomes lighter.
Sultanas
Add moisture and sweetness, softening slightly as the cake bakes.

The step that matters

Creaming the butter and sugar. Beating until light and fluffy traps air in the fat, which helps the cake rise and gives a fine, even crumb. Under-creamed butter leaves a dense cake.
