Galantine of Veal

Ingredients

Directions

Prepare the veal

  1. Remove the bones from the veal and flatten it on a board.

  2. Spread a thick layer of sausage meat over the veal; if not well flavored, add minced herbs.

  3. Layer small diced tongue, chopped nuts, sliced gherkins, and small pieces of truffles over the sausage meat.

  4. Add another layer of sausage meat on top.

Cook and set

  1. Roll up the veal in a cloth like a pudding and boil for 6 hours.

  2. Once cool, tie tightly with broad tape and press with a heavy weight.

Finish and serve

  1. Glaze to a nice dark brown when cold and serve garnished with parsley and aspic jelly.

  2. Cut off the first slice before serving to display the marbled appearance.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal breast
Forms the outer wrapper that encloses the stuffing and holds the roll together while cooking.
Sausage meat
Provides the main body of the filling, binding the other layers and adding richness and savory flavor.
Tongue or ham
Adds savory meatiness and a firm texture that contrasts with the soft sausage.
Truffles
Contribute a strong earthy aroma that perfumes the filling.
Pistachio nuts
Add crunch and contrast in texture within the filling.

The step that matters

Tie and press after cooling. Tying tightly while the roll is still warm and pressing it under a weight as it cools helps the layers bond and sets a compact, even shape, so the marbled slices hold together when cut.

Swap the nuts

How well each one fits the dish's main ingredients (veal, meat, ham, truffle, pistachio):

  1. Walnutfits better
  2. Chestnutfits better
  3. Almondfits about as well
  4. Nutsthe original

Fit is the average pairing score against veal, meat, ham, truffle, pistachio. Candidates are from the same food group and used in at least 100 recipes.
