What each ingredient does

Eggs
Bind the mixture and help it set as it cooks.
Breadcrumbs
Give body to the batter and soak up moisture from the milk.
Suet
Adds fat that keeps the pudding moist and rich in texture.
Carrot
Mashed into a pulp to add moisture, bulk and natural sweetness.
Sugar
Adds sweetness and helps browning on the baked version.

The step that matters

Mashing the carrots to a smooth pulp. Carrots that stay lumpy or undercooked leave uneven texture and pockets in the pudding. Cooking until fully tender lets them break down smoothly and blend evenly into the batter.
