Pastry Sandwiches

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Roll out the puff pastry thinly.

  2. Place half of the pastry on a baking sheet and spread jam evenly over it.

  3. Cover the jam with another layer of thin pastry and press the edges together.

  4. Score the surface with a knife to mark cutting lines.

Bake and finish

  1. Bake at 400°F (200°C) for 20 minutes to ½ hour.

  2. A few minutes before done, brush the pastry with egg white and sprinkle with sifted sugar.

  3. Return to the oven to color.

  4. Once cooled, cut into 2‑inch strips and arrange in a pyramid on a dish.

  5. Serve with flavored whipped cream poured in the center.

What each ingredient does

Puff pastry
Forms flaky, layered structure that puffs and crisps when baked.
Jam
Adds sweetness and moisture that fills the sandwich between the pastry layers.
Egg white
Gives the surface a glossy sheen and helps browning.
Sifted sugar
Forms a sweet, caramelizing crust on the top as it bakes.

The step that matters

Returning the pastry to the oven to color. Pastry browns quickly once the sugar is on the surface, so it can burn if left too long. Watching closely keeps the top golden rather than dark.
