  4. Add the sugar and cover with the crust.

  5. Pinch the edges together and tie over a floured cloth.

Boil and serve

  2. Turn it out of the basin and serve with cream and sifted sugar.

What each ingredient does

Rhubarb
Provides the tart filling that is sweetened by the sugar and cooked until tender.
Moist sugar
Sweetens the rhubarb and helps draw out juice that forms a syrup in the pudding.
Suet crust
Forms a sturdy, moist pastry casing that holds the filling while it steams and boils.

The step that matters

Tie the cloth securely over the basin. A loose or unfloured cloth can let water seep in during boiling, making the crust soggy. A snug, floured cloth keeps the pudding dry and helps it hold its shape.

Swap the rhubarb

How well each one fits the dish's main ingredients (sugar, flour):

  1. Jalapenofits better
  2. Cinnamonfits better
  3. Rhubarbthe original
  4. Nutmegfits less well

Fit is the average pairing score against sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
