Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Barley
Its starch thickens the water into a light, body-giving gruel as it cooks and breaks down.
Port wine
Adds acidity and fruity sweetness, and its alcohol carries the lemon aroma.
Lemon rind
Supplies aromatic oils that flavour the gruel during simmering.

The step that matters

Boil until the liquid is reduced by half. Reducing concentrates the starch and flavour from the barley water. Stopping too early leaves the gruel thin and watery, while boiling too long makes it thick and sticky.
