What each ingredient does

Mushrooms
Provide the main bulk and moisture of the cutlets, softened by frying first.
Eggs
Bind the mixture together and give the dipped coating a golden set when fried.
Bread crumbs
Absorb moisture and give the cutlets body and a crisp, browned outside.
Mashed potatoes
Add starch and softness that help the mixture hold its shape.
Butter
Adds richness and helps the cutlets brown during frying.

The step that matters

Fry the mushrooms and onion until soft. Mushrooms hold a lot of water. Cooking them down before mixing drives off moisture, so the cutlets hold their shape and do not turn soggy or fall apart when fried.
