What each ingredient does

Eggs
Are the main component, heated gently in the sauce so they absorb its flavour and stay tender.
Butter
Carries the frying of onion and apple, adding richness and helping them brown.
Curry powder
Provides the spiced aroma and flavour that defines the sauce.
Wheatmeal
Thickens the sauce as its starch swells when heated, giving body to the curry.
Onion
Builds a sweet, savoury base as it browns in the butter.
Cooking apple
Adds sweetness and a mild tang that balances the spice, and softens into the sauce.

The step that matters

Thicken the sauce with the curry mixture. Wheatmeal must be mixed smooth with cold water first, then simmered, so its starch swells evenly. Lumps form if it goes in dry or hot, and a thin, lumpy sauce results.

Swap the onion

How well each one fits the dish's main ingredients (egg, apple, butter):

  1. Asparagusfits better
  2. Potatofits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against egg, apple, butter. Candidates are from the same food group and used in at least 100 recipes.
