Directions

Prepare the base

  1. Break the sponge cakes into pieces.

  2. Boil the milk and pour it over the sponge cake pieces; mash well with a spoon.

  3. Dissolve half the chocolate in a saucepan with 2 tablespoons of water and flavor with 1 inch of split vanilla; remove the vanilla once dissolved.

Assemble and finish

  1. In a wetted mold, layer sponge cake, then spread some dissolved chocolate, and sprinkle with almonds and ratafia; repeat until finished with a layer of sponge cake.

  2. Grate the remaining chocolate.

  4. Turn the sponge cake mold into a glass dish, spread the chocolate cream evenly over it, and decorate with almonds.

What each ingredient does

Sponge cakes
Forms the layered structure and soaks up the milk and chocolate.
Chocolate
Provides flavor and, once melted and cooled, sets the layers and chocolate cream firm.
Cream
Adds moisture and a light, airy texture when whipped.
Egg whites
Whipped with the cream to help it hold a light, airy foam.
Milk
Softens the sponge cake so it becomes moist and easy to mash.

The step that matters

Whipping the cream with the egg whites. Over-whipping cream can turn it grainy and cause it to separate, while under-whipping leaves it too loose to hold its shape in the layers. Stop when it holds soft peaks.

Swap the almond
