What each ingredient does

Macaroons
Provide the main sweet, almond-flavoured body of the dessert once crushed.
Milk
Loosens the crushed macaroons into a smooth paste that spreads evenly between layers.
Cream
Whipped into air, it adds lightness, richness and a soft, creamy texture to the layers.

The step that matters

Whip the cream to stiff peaks. Cream whipped to stiff peaks holds its air and shape when layered. If overwhipped, the fat clumps and turns grainy or buttery, and if underwhipped the layers will slump and blend into the paste.
