What each ingredient does

Oats
Their starch swells in the hot water, thickening the liquid into porridge.

The step that matters

Stirring occasionally off the direct heat. Oats are starchy and settle onto the base of the pan, where they can scorch. Stirring keeps them suspended and evenly heated, while keeping the pan at the side of the stove lowers the heat so the porridge thickens gently.
