Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground rice
Thickens the milk into a firm base that holds its shape when cut.
Egg
Binds the mixture and helps it set as it bakes.
Milk
Cooks with the ground rice to form a thick, moist custard-like base.
Grated cheese
Adds richness and flavor, and browns on the surface as it bakes.
Bread crumbs
Form a crisp, browned crust on the top and bottom.

The step that matters

Boil the ground rice in the milk until thick. Ground rice must be cooked fully in the liquid so its starch swells and thickens. If it is undercooked, the mixture stays loose and will not set firmly when baked.

Swap the nutmeg

How well each one fits the dish's main ingredients (rice, egg, milk, cheese, bread, butter):

  1. Nutmegthe original
  2. Cinnamonfits about as well
  3. Parsleyfits less well
  4. Capersfits less well

Fit is the average pairing score against rice, egg, milk, cheese, bread, butter. Candidates are from the same food group and used in at least 100 recipes.
