  1. Soak the rabbit in cold water for 30 minutes.

  2. Place the rabbit in a pot of hot water and bring to a slow boil.

  3. Skim the pot thoroughly and simmer gently for 45 minutes.

  4. If using, boil the bacon or pickled pork for 30 minutes before adding it to the pot.

  5. Add onions if desired and serve with white sauce.
