Why it works: Wheat and peanut match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 151 recipes. Both carry 2-acetyl-1-pyrroline, which smells popcorn, roasted. The science ↓

Directions

Prepare the mixture

  1. Dissolve gum arabic in enough rainwater, distilled water, or fruit juices to moisten the ingredients.

  2. In separate bowls, cream the raisins, figs, and peanuts with the flour.

  3. Combine all ingredients and roll out to a stiff consistency, adding water as needed.

Shape and dry

What each ingredient does

Ground raisins
Provide sweetness and moisture that help the mixture hold together.
Ground figs
Add sweetness, body and moisture to the dough.
Coarsely ground wheat
Supplies starch and bulk that give the mixture its structure.
Skinned raw peanuts
Add fat and richness, giving the strips a firmer, toothsome texture.
Gum arabic
Acts as a binder that helps the ground ingredients stick together.

The step that matters

Adding water to reach a stiff consistency. Too much water makes the mixture slack so the strips will not hold their shape, while too little leaves it crumbly and prone to cracking when rolled. Adding liquid gradually lets the ground fruit, nut and grain particles absorb it evenly and bind into a dough that can be cut cleanly.

Swap the raisin

How well each one fits the dish's main ingredients (fig, wheat, peanut):

  1. Coconutfits better
  2. Vanillafits better
  3. Bananafits better
  4. Raisinthe original

Fit is the average pairing score against fig, wheat, peanut. Candidates are from the same food group and used in at least 100 recipes.
