Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salsify
Provides the main vegetable bulk and a mild, delicate flavour as the salad's centrepiece.
Cabbage or lettuce leaves
Forms the crisp base layer that gives the salad body and freshness.
Bleached celery
Adds a crisp, fresh texture and mild celery flavour between the layers.
Mayonnaise
Adds fat and richness, moistening the salad and binding its flavours together.

The step that matters

Salting and standing the salsify slices. Salt draws water out of the sliced roots through osmosis, seasoning them and firming their texture. Rinsing afterward removes excess surface salt so the salad doesn't taste harsh.

Swap the cabbage

How well each one fits the dish's main ingredients (oyster, celery, pepper):

  1. Carrotfits better
  2. Capsicumfits better
  3. Mustardfits better
