Stuffed Tomatoes

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Scoop out the middle of the fresh tomatoes and mash it fine.

  3. Pass the mashed tomato through a colander into a bowl.

  4. Add chopped nuts, onions, hard-boiled eggs, finely-cut parsley, flaked rice, coarse sea salt, and black pepper to taste.

  5. Stir all ingredients into a paste.

  6. Fill the tomatoes with the stuffing and bake until heated through.

  7. Alternatively, serve the stuffed tomatoes on lettuce leaves garnished with cress and nasturtium leaves.
