Elder Wine
Ingredients
Directions
Prepare the juice
Gather ripe elder berries.
Place them in a stone jar or heat them in a kettle of boiling water until the jar is hot.
Strain berries through a fine cloth, wringing to extract juice into a clean kettle.
Make the wine base
Add 1 pound of fine Lisbon sugar to every quart of juice and bring to a boil, skimming off foam.
Once clear, pour mixture into a jar, let it cool, cover tightly, and store until ready to use for raisin wine.
