What each ingredient does

Rice
Softens into the soup as it simmers, giving body and a thick texture.
Butter
Carries the flavour and gives the rice and turnips a rich, fatty finish.
Turnips
Brown lightly in butter, adding sweetness and savoury depth as they stew.
Stock
Forms the liquid base that cooks the rice and turnips and carries the flavour.
Parmesan
Adds a salty, savoury, umami finish when sprinkled over the served soup.

The step that matters

Frying the turnips until light brown. Browning turnips in butter creates flavour through the Maillard reaction, but overcooking can make them bitter and dry. Stop at light brown so they stay tender inside.

Swap the turnip

How well each one fits the dish's main ingredients (rice, butter, pepper):

  1. Capsicumfits better
  2. Potatofits better
  3. Asparagusfits better
  4. Turnipthe original

Fit is the average pairing score against rice, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
