Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓
Baked Cod
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Soak the cod in cold water with salt for 30 minutes.
Wipe the fish dry and stuff it with a mixture of breadcrumbs, pepper, salt, chopped pork, minced onion, sweet herbs, and Brand's A1 sauce.
Place the fish in a baking dish and pour thin melted butter over it, seasoned with lemon juice and parsley.
Bake at 350°F (175°C) for about 1 hour, basting frequently to prevent browning.
When done, strain the gravy over the fish and serve hot.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
