What each ingredient does

Cranberries
Provide the tart fruit base whose pectin helps the sauce thicken as it cooks.
Sugar
Sweetens the sauce and balances the cranberries' natural tartness.

The step that matters

Stirring often over medium heat. Sugar and fruit juices can scorch on the bottom of the pot if left unstirred, giving a burnt taste. Regular stirring spreads the heat and keeps the sauce smooth.
