Hashed Game, Etc

Ingredients

Directions

  1. Detach the shin and sinews from the cold meat and chop it finely.

  2. Put the chopped meat into a stewpan with sufficient strong stock.

  3. Season with pepper, nutmeg, and coarse sea salt.

  4. Thicken the mixture with cream and let it nearly boil.

  5. Serve with poached eggs and small sippets of bread tossed in oil.

  6. For white meats, fried oysters can replace the poached eggs.

  7. For hashed calf's head, fry the brains into small cakes for garnish.

  8. For game, add some chopped savory herbs.

  9. To serve en crousiade, cut slices of bread into heart or circular shapes, remove some crumb from the middle, and fry them in butter.

  10. Lay some hash on the fried bread, place a poached egg on each, and serve hot.
