Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef suet
Adds fat that keeps the sausage moist and tender as it cooks.
Bacon
Adds fat and smoky flavour to the meat filling.
Beef
Provides the main meaty structure of the filling.
Pork
Adds fat and body, helping the filling hold together.
Veal
Contributes mild flavour and a soft, fine texture to the filling.

The step that matters

Prick the sausages with a needle. Pricking lets trapped air and steam escape from the casing, so the sausages are less likely to burst while they cook.

Swap the marjoram

How well each one fits the dish's main ingredients (beef, pork, veal, sage, pepper):

  1. Marjoramthe original
  2. Thymefits about as well
  3. Rosemaryfits less well
  4. Parsleyfits less well

Fit is the average pairing score against beef, pork, veal, sage, pepper. Candidates are from the same food group and used in at least 100 recipes.
