Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓
Herring Pie
Ingredients
Directions
The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.
Scale, draw, and wipe the herrings, then cut off their heads, tails, and fins.
Line a dish with a light pie crust and add some butter at the bottom.
Season the fish with plenty of pepper, nutmeg, and a little coarse sea salt.
Lay the fish in the dish and sprinkle with lemon juice.
Cover with a top crust and bake at 300°F (150°C) until done.
Optionally, toss the fish in butter and add a little chopped shallot before placing them in the pie.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
