Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Jerusalem artichokes
Provide the main body and starchy, earthy flavour of the soup once cooked and puréed.
Chicken stock
Supplies the liquid that cooks the artichokes and forms the soup's savoury base.
Butter
Adds fat for a rich mouthfeel and helps soften the artichokes before liquid is added.
Milk
Adds creaminess and mellows the soup's flavour when stirred in at the end.

The step that matters

Rub the mixture through a sieve. Jerusalem artichokes contain starch that thickens as they cook; pressing them through a sieve breaks the cell walls to give a smooth texture rather than a grainy one.

Flavor stand-ins for the jerusalem artichoke

How well each one fits the dish's main ingredients (chicken, butter, milk, sugar, pepper):

  1. Capsicumbetter flavor fit
  2. Potatobetter flavor fit
  3. Tomatobetter flavor fit
  4. Jerusalem artichokethe original

Fit is the average pairing score against chicken, butter, milk, sugar, pepper. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
