Why it works: Carrot and turnip match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 8,002 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Biscuit Hash

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Soak the biscuits until soft, then squeeze out all the water.

  2. Mince the beef and vegetables, then add them to the biscuits.

  3. Add the mixed spice or herbs, and season with salt and pepper to taste.

  4. Mix everything thoroughly, then transfer to a baking tin.

Bake and serve

  1. Smooth the top with a knife or the back of a spoon.

  2. Pour a little liquid dripping over the top, mark into squares, and bake at 350°F (175°C) until firm.

  3. Cut into squares, remove from the tin, and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Crew biscuits
Soaked and squeezed, they form the bulk and binding of the hash.
Cooked salt beef or pork
Provides savoury flavour and substance to the filling.
Onions
Add sweetness and aroma as they soften through the mixture.
Liquid dripping
Poured over the top, it adds fat that helps the surface brown and crisp.

The step that matters

Squeeze out the soaked biscuits. Excess water left in the soaked biscuits would make the hash soggy and stop it setting firm when baked, so the biscuits must be well drained before mixing.

Swap the onion

How well each one fits the dish's main ingredients (biscuit, carrot, beef, turnip, pepper):

  1. Parsnipfits better
  2. Spinachfits better
  3. Leekfits better
  4. Onionthe original

Fit is the average pairing score against biscuit, carrot, beef, turnip, pepper. Candidates are from the same food group and used in at least 100 recipes.
