Galantine of Veal

Ingredients

Directions

Prepare the veal

  1. If using breast, bone it and flatten it.

  2. Season the sausage meat with herbs and spread a thick layer over the veal.

  3. Cut the tongue, mushrooms, and other ingredients into small squares and sprinkle over the sausage meat.

  4. Add another layer of sausage meat on top and roll it up tightly.

Cook and set

  1. Tie it in a cloth and simmer gently for about four hours.

  2. Remove from the pan, let it cool slightly, then tie it tightly and place a heavy weight on top.

  3. Once cold, remove the cloth, glaze, and garnish with chopped aspic, parsley, and lemon slices.

  4. Before garnishing, cut off the outside slice to reveal the marbled appearance inside.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the outer meat wrapper that holds the stuffing together during roll-up and simmering.
Sausage meat
Adds fat and moisture, keeping the stuffing tender and juicy as it cooks.
Cooked ox tongue
Provides chewy texture and meaty flavor contrast within the sliced interior.
Truffles
Contributes a strong earthy aroma that perfumes the sausage layer.
Pistachio nuts
Adds crunch and a mild nutty flavor, and color contrast in the marbled slices.

The step that matters

Tie tightly and weight while cooling. Firm, even pressure as the roll cools helps the layers bind and keeps the slices neat and compact rather than crumbling when cut.

Swap the nuts

How well each one fits the dish's main ingredients (veal, meat, truffle, mushroom, pistachio, pepper, parsley):

  1. Chestnutfits better
  2. Walnutfits better
  3. Beansfits better
  4. Nutsthe original

Fit is the average pairing score against veal, meat, truffle, mushroom, pistachio, pepper, parsley. Candidates are from the same food group and used in at least 100 recipes.
