Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  2. Add the minced beef and all remaining ingredients; mix thoroughly.

Shape and bake

  1. Turn the mixture out onto a well-floured board and shape it like a large croquette.

  2. Place the shaped mixture in a baking tin about ½ inch deep with hot fat.

  3. Cover with greased paper and bake at 350°F (175°C) for 30 minutes.

Serve

  1. Dish up and serve with brown sauce flavored with ketchup.

  2. Garnish with parsley and egg yolks.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold beef
Forms the main body of the filling and gives it a meaty, savory structure.
Bread crumbs
Absorb moisture and help bind the minced meat so the mixture holds together.
Egg yolk
Acts as a binder that helps the mixture set and hold its shape when baked.

The step that matters

Shaping the mixture on a floured board. The mixture is soft and moist, so flouring the board keeps it from sticking. Shaping it firmly helps it hold a croquette form while baking.

Swap the onion
