Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the stuffing

  1. Preheat the oven to 400°F (200°C).

  2. Remove the gills from the chestnuts and chop them.

  3. In a bowl, mix the chopped chestnuts, onion, arrowroot, pepper, herbs, and salt.

  4. Stuff the turkey with the chestnut mixture and truss it.

Roast and serve

  1. Place the turkey in a roasting pan and cover it with bacon slices.

  2. Pour the stock and half of the port wine over the turkey.

  3. Roast in the oven for about 3 hours, basting occasionally.

  4. In the last 30 minutes, add the remaining port wine to the pan.

  5. Once cooked, let the turkey rest before carving.

What each ingredient does

Chestnuts
Add starchy body and a mild, nutty flavour to the stuffing.
Arrowroot
Thickens the juices and stuffing mixture, giving a smoother texture.
Bacon
Its fat bastes the turkey and helps keep the meat moist while roasting.
Port wine
Adds sweetness and depth to the pan juices as it reduces during roasting.
Onion
Contributes savoury aroma and moisture to the stuffing as it cooks.

The step that matters

Roast in the oven for about 3 hours, basting occasionally. A large stuffed bird can dry out on the outside before the centre is cooked through. Regular basting keeps the surface moist and helps the skin brown evenly, while the stuffing must reach a safe internal temperature.
