  1. Parboil the potatoes.

  2. Mince the mutton and mint together to form a paste.

Assemble and fry

  1. Cut the parboiled potatoes into slices a quarter of an inch thick.

  2. Spread a little of the paste on one potato slice and cover with a second slice to form a sandwich.

Serve

  1. Dish up, garnish with parsley, and serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the crisp-edged outer casing and soft interior around the filling.
Cooked mutton or lamb
Provides the savoury meaty filling that gives the fritter its main flavour.
Fritter batter
Coats the sandwiches and fries to a crisp, golden shell.
Flour
Thickens the butter and water mixture so the filling binds into a paste.
Butter
Adds richness and helps the flour cook into a smooth base for the filling.

The step that matters

Frying in deep hot fat. If the fat is not hot enough, the batter absorbs oil and turns greasy instead of crisping quickly, and the filling may heat through unevenly.

Swap the mint

How well each one fits the dish's main ingredients (potato, mutton, vinegar, pepper, butter, flour):

  1. Parsleyfits better
  2. Thymefits better
  3. Garlicfits better
  4. Mintthe original

Fit is the average pairing score against potato, mutton, vinegar, pepper, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
