Why it works: Cheese and milk are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 4,426 recipes. Both carry delta-dodecalactone, which smells sweet, creamy. The science ↓
Cheese Straws
Ingredients
Directions
The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Make the dough
Mix the cheese, flour, and cayenne together.
In a separate bowl, mix the yolks and milk (or water). Pour the yolk mixture into the flour mixture and knead into a firm dough.
Roll out the dough and cut it into strips the size of large matchsticks.
Bake
Place the strips on a baking sheet and bake in a 350°F (175°C) oven for about five minutes.
Do not allow the Cheese Straws to brown while baking to avoid a bitter flavor.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Grated cheese
- Provides the main flavor and fat, and helps bind the dough.
- Flour
- Forms the structure of the dough once it is kneaded with liquid.
- Egg yolks
- Add richness and help bind the dough into a firm, cohesive mass.
The step that matters
Bake without browning. Cheese scorches quickly at high heat, and browned cheese turns bitter, so the straws should be watched and removed while still pale.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
