What each ingredient does

Marrow
Melts into the toast, adding rich fat and a buttery, savoury texture.
Bread
Provides a crisp, absorbent base that holds the warm marrow.
Parsley
Adds fresh, green aroma that balances the richness of the marrow.

The step that matters

Heat before the fire for 5 minutes or until done. Marrow is mostly fat, and it needs enough gentle heat to soften and turn spreadable without overcooking. Too little heat leaves it cold and firm, while too much can make it greasy and cause it to run off the toast.

Swap the parsley

How well each one fits the dish's main ingredients (bread, pepper):

  1. Parsleythe original
  2. Marjoramfits about as well
  3. Sagefits about as well
  4. Thymefits less well

Fit is the average pairing score against bread, pepper. Candidates are from the same food group and used in at least 100 recipes.
