  1. Boil fish bones in a small amount of water for 20 minutes.

  2. Let the stock cool, then mix ⅓ cup of it with 2 ounces of flour.

  3. Stir over heat until thickened, then add 2 ounces of butter and mix well.

  4. Remove from heat and stir in 1 egg, essence of anchovy, lemon juice, salt, and cayenne pepper.

  5. Combine the sauce with the picked fish.
