Baked Soles

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 300°F (150°C).

  2. Dissolve a little butter in a baking dish.

  3. Coat the white side of the sole with the butter and place it black side down in the dish.

  4. Sift fine bread crumbs over the fish, seasoned with pepper and coarse sea salt.

  5. Bake for 30 minutes or until the fish is cooked through.
