  2. Heat the mixture slowly without boiling.

  3. Once hot, add a little sauce, pepper, and salt to taste.

  2. Garnish each slice with a sprig of fried parsley and place the mince in the center.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold meat
Forms the body of the dish, giving the mince its main texture and flavour.
Good gravy
Keeps the minced meat moist and carries its flavour while it heats.
Shallot
Adds a mild onion-like aroma and savoury sweetness to the mixture.

The step that matters

Heat the mixture slowly without boiling. Boiling toughens the proteins in meat and makes it dry and firm, so gentle heating keeps the mince tender and moist in the gravy.

Swap the parsley

How well each one fits the dish's main ingredients (meat, shallot, sauce, pepper, bread):

  1. Capersfits better
  2. Parsleythe original
  3. Thymefits about as well
  4. Tarragonfits about as well

Fit is the average pairing score against meat, shallot, sauce, pepper, bread. Candidates are from the same food group and used in at least 100 recipes.
