Minced Chicken with Egg

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the chicken gravy

  1. Place the chicken bones in a pot with a little water and the onion. Boil for 1 hour.

  2. Remove the fat from the gravy and add the minced chicken. Simmer gently until tender.

  3. Mix enough flour with milk to thicken the mixture, then stir it into the chicken and simmer.

Bake and serve

  1. Season the mixture and add the chutney. Pour into a serving dish.

  2. Break an egg on top for each person, sprinkle with bread crumbs, pepper, and salt.

  3. Bake in the oven at 350°F (175°C) until the eggs are set but not hard. Serve with fried croutons.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set to a soft custard-like layer that holds the dish together when baked.
Flour
Thickens the milk and gravy so the chicken mixture becomes saucy rather than watery.
Milk
Adds moisture and richness to the thickened sauce around the chicken.
Fine bread crumbs
Form a crisp, lightly browned topping over the eggs in the oven.

The step that matters

Bake until the eggs are just set. Egg proteins set as they heat, and overbaking pushes them past soft set into firm, rubbery texture. Pulling the dish when the whites are just opaque keeps the yolks tender.

Swap the onion

How well each one fits the dish's main ingredients (meat, chicken, flour, milk, pepper, egg, bread):

  1. Capsicumfits better
  2. Asparagusfits better
  3. Potatofits better
  4. Onionthe original

Fit is the average pairing score against meat, chicken, flour, milk, pepper, egg, bread. Candidates are from the same food group and used in at least 100 recipes.
