Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Kidneys
- Provide the main meaty substance, which firms and turns opaque as it cooks.
- Button mushrooms
- Add earthy flavour and moisture that releases into the butter as they cook.
- Dried mushrooms
- Concentrate deep mushroom flavour once rehydrated in water.
- Butter
- Carries the cooking and adds richness and a rounded, nutty flavour.
The step that matters
Cook the kidneys slowly while stirring. Kidneys turn tough and rubbery when overcooked at high heat, so gentle cooking keeps them tender while they firm through.
