Puree of Mushrooms

Ingredients

Directions

  1. Chop the mushrooms and simmer them in milk or broth for 10 minutes.

  2. Add the crumbled roll and stir over heat until all liquid is absorbed.

  3. Stir in the butter, pepper, and salt, then rub through a wire strainer. If the puree is too stiff, add a little milk or cream while straining.

  4. Return the puree to the stewpan and heat before serving.

What each ingredient does

Mushrooms
Provide the main flavour and the bulk of the puree.
Milk or broth
Softens the mushrooms during simmering and keeps the puree moist.
Roll
Absorbs liquid and thickens the puree to a smooth body.
Butter
Adds richness and a silky mouthfeel to the finished puree.

The step that matters

Rubbing through the wire strainer. Pushing the cooked mushrooms and crumb through a fine strainer breaks down fibres and removes lumps, which gives the smooth texture a puree needs. Skipping it leaves a coarse, stringy result.
