Ingredients

Directions

Prepare the meat

  1. Combine meat, chopped onions, salt, cayenne pepper, and milk in a bowl and stir well.

Make the masala

  1. Melt butter in a pan.

  2. Fry one chopped onion until golden brown, then remove the onion.

  3. Mix turmeric with a little water and stir the mixture into the butter over low heat for 5 minutes, making sure it doesn't burn.

Cook and simmer

  1. Add the meat mixture and the fried onion to the pan and stir well.

  2. Once it boils, add a little water.

  3. Repeat adding water as necessary until the meat is tender.

  4. When the meat is tender, add enough water to cover it.

  5. Let it simmer until the gravy reduces significantly.

  6. Allow about 5 hours of preparation and simmering, with careful attention throughout.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Meat
Provides the main protein, which becomes tender through long, gentle simmering in liquid.
Butter
Carries the spices and adds richness and fat to the gravy.
Onions
Browning the fried onion adds sweetness and depth to the gravy.
Milk
Adds moisture and mild richness to the marinade for the meat.
Turmeric
Gives the curry its yellow colour and an earthy aroma.

The step that matters

Stirring the turmeric into the butter over low heat. Turmeric scorches easily, and burnt spice turns bitter. Gentle heat with constant stirring blooms its flavour in fat without burning it.
