What each ingredient does

Salt pork
Renders fat that flavours the pot and browns the onions for savoury depth.
Potatoes
Release starch as they cook, giving the soup body and a thicker texture.
Clams
Provide the main seafood flavour, released into the broth as it simmers.
Flour
Thickens the liquid by swelling with heat, giving the soup a creamier body.
Milk
Adds richness and a mild sweetness that softens the broth's saltiness.

The step that matters

Thickening with the flour mixture. Flour must be mixed smoothly with water before adding it, or it clumps. Starch swells when heated, so the soup must boil after adding it to thicken evenly.
