Puff Paste with Egg Whites

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Combine corn starch with water in a small tin pail.

  2. Place the pail in a pot of boiling water and boil until thick.

  3. Prepare a puff paste and line a plate with it.

  4. Bake the puff paste in a 400°F (200°C) oven until lightly browned.

  5. Pour the thick mixture into the baked puff paste.

  6. Beat the egg whites with sugar until stiff and spread on top.
