Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg white
Clarifies the stock as it cooks, collecting fine particles so the soup strains clear.
Gravy beef
Gives the stock its meaty flavour as it simmers with the vegetables and herbs.
Stock
Forms the liquid base of the soup and carries the flavour of every other ingredient.
Turnip
Adds body and a mildly sweet, earthy flavour to the broth.
Carrot
Contributes sweetness and colour to the finished soup.

The step that matters

Stir until it boils, then simmer gently. Egg white clarifies the stock only if it is stirred while heating and then left undisturbed. Vigorous boiling breaks up the coagulated egg white and leaves the soup cloudy.

Swap the onion

How well each one fits the dish's main ingredients (turnip, egg, carrot, celery, beef, pepper, sugar):

  1. Leekfits better
  2. Parsnipfits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against turnip, egg, carrot, celery, beef, pepper, sugar. Candidates are from the same food group and used in at least 100 recipes.
