What each ingredient does

Milk
Forms the custard base and, as it reduces, concentrates flavour and sets into a creamy body.
Cornflour
Thickens the milk as it heats, giving the custard structure so it sets firm when chilled.

The step that matters

Mixing the cornflour with milk before boiling. Cornflour clumps if added directly to hot liquid. Blending it smooth with a little cold milk first lets the starch disperse evenly, so it thickens the custard without lumps.
