Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Veal Cake

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 300°F (150°C).

  2. Cut the eggs into thick slices and line the bottom of a well-buttered cake tin.

  3. Cut the veal and bacon into dice and place a layer on top of the eggs.

  4. Add chopped parsley, seasonings, and grated lemon rind.

  5. Fix two or three slices of egg onto the sides of the tin.

  6. Fill the tin with alternate layers of egg, veal, bacon, and parsley until two-thirds full.

  7. Dissolve the gelatine in the stock gently over the heat and strain it into the tin until full.

  8. Cover with greasy paper and bake for one and a half hours.

  9. Remove from the oven and let cool.

  10. Place the tin in hot water for a moment and turn out quickly onto a cold dish.

  11. Garnish with sprigs of fresh parsley and serve.
