Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the strained tomato liquid into a firm, sliceable jelly.
Ripe tomatoes
Provide the main flavour, colour and body of the jelly.
Tomato ketchup
Adds concentrated tomato flavour and extra depth to the jelly.
Sugar
Balances the acidity of the tomatoes and rounds out the flavour.

The step that matters

Soaking the gelatin. Gelatin must hydrate fully in cold water before it dissolves, so the jelly sets evenly without lumps or weak spots. Dissolve it fully before mixing it into the hot tomato liquid.

Flavor stand-ins for the tarragon

How well each one fits the dish's main ingredients (gelatin, tomato, ketchup, sugar, vinegar):

  1. Tarragonthe original
  2. Celeryabout as good a flavor fit

Fit is the average pairing score against gelatin, tomato, ketchup, sugar, vinegar. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
