What each ingredient does

Apples
Break down into a soft, sweet, flavorful purée that forms the base of the omelet.
Egg whites
Whipped to stiff foam, they lighten the mixture and give the omelet its airy structure.
Egg yolks
Enrich the apple base and help it set into a tender, custard-like texture.
Butter
Adds richness and helps the omelet brown lightly and release from the pan.

The step that matters

Fold the whipped egg whites into the apple mixture. Folding gently keeps the air bubbles in the whites. Stirring or beating them down makes the omelet dense and flat instead of light.
