What each ingredient does

Mutton
Slow simmering softens its connective tissue into a tender, moist texture.
Dripping
Fat that conducts heat for browning the meat and adds savoury flavour.
Onion
Browning develops sweetness and savoury aroma that flavour the stock.
Carrot
Adds natural sweetness and holds its shape during long simmering.
Turnip
Adds mild sweetness and a firm, slightly starchy bite to the stew.

The step that matters

Brown the mutton pieces in dripping. Searing the meat in hot fat triggers the Maillard reaction, creating deep savoury browned flavour. Crowding the pan or leaving the meat wet causes steaming, which yields pale, bland meat.

Swap the onion

How well each one fits the dish's main ingredients (mutton, carrot, turnip, meat):

  1. Leekfits better
  2. Parsnipfits better
  3. Shallotfits better
  4. Onionthe original

Fit is the average pairing score against mutton, carrot, turnip, meat. Candidates are from the same food group and used in at least 100 recipes.
